How to Make Spicy Tuna
Spicy tuna ingredients: 1/2 pound of sashimi grade raw tuna diced into about 3/8 inch (9mm) cubes. 1 table spoon
Japanese Kewpie Mayonnaise
if available otherwise use your favorite brand. 1/4 teaspoon Rayu or hot sesame seed oil. 1 1/2 - 2 teaspoons
Sriracha hot chili sauce,
use more or less to taste.
Add hot chili sauce and sesame seed oil to mayonnaise in a bowl mix well Fold cubed tuna into bowl stir using a silicone spatula to coat the tuna. Spoon onto sushi assembly for rolls, hand rolls, etc. Refrigerate the spicy-tuna for later use. 1/2 pound of tuna yields approximately 24-32 hosomaki (small) roll pieces.
