Chu Toro (fatty cut of tuna)
Chu toro comes from the bluefin tuna's upper part of its belly. From the mid belly up into the upper region forward of the body. More common than oh toro, this chu type sashimi sometimes has distinct white lines in the cut. A bit of melt in your mouth here too. If oh toro is not available then this is the next best thing. Ask for fatty tuna or cut near the belly. If they don't give you oh toro it'll be fatty tuna. Cut your sushi slices into 1/8 inch (5 mm) thick slices and use as topping for nigiri zushi. Wasabi and shoyu will make it a delight.
